My man is usually the one doing all the cooking and baking, so for once I wanted to show him some of my skills =)
Since I started studying at the Royal IT 3 years ago, taking the time to cook real food was not one of my priorities. I also gave up being vegan for many reasons – mainly the fact that there was no vegan food anywhere near the school, or during any of the events I was participating in (which were…many!). I have pretty much lived at that school for several years now, but since meeting my boyfriend I have once again opened up my interest for good food, and especially vegan food.
With that said, I gave my cooking skills a try again after 3 years, and made us some yummy stuffed cabbage:

I don’t really have an actual recipe for this, but I dug in the back of my head for the original recipe that inspired this meal. Depending on how much you want, adjust the measurements of the ingredients. I cooked enough for about 4 people:
Outer layer:
Preheat oven to 175 degrees C.
Boil one medium-large sized cabbagehead until soft enough to carefully pull off each leaf and fold (as in the picture above)
Stuffing:
Cook green lentils until soft ( I used about 200-250 grams of dried lentils that I soaked in water for 2 hours prior to cooking )
Cook wheatberries (alternatives: bulgur, brown/black/red rice) so that the quantity is about the same as the cooked green lentils
Fry 2 medium-sized yellow onions with about 2-3 cloves of garlic and 2-3 handfuls of sliced mushrooms
Warm up a can of crushed tomatoes and mix it with veggie broth
Stir all of the stuffing ingredients together, and add spices and herbs such as cayenne pepper, salt, oregano, etc, after taste.
Grease a roasting pan.
After carefully peeling off each leaf of the cabbagehead, put in 2-3 spoonfuls of the stuffingmix, then fold the leaf around it.
Place the small packages of stuffed cabbage in the pan, then sprinkle with rapeseed oil and soy sauce. I used…a lot of both =)
Bake on the middle rack in the oven for about 15-20 mins, or if you want to add more colour, use the browning function on the oven (or however it is called!) to gratinate it.
